Jalapeno Mashed Potatoes

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 4 baking potatoes, peeled and halved
  • 1 cup half-and-half
  • 2 tablespoons butter
  • 4 jalapeno peppers, seeded and minced
  • 4 green onions, sliced
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons lime zest

Recipe

  • 1 put potatoes in a saucepan; add water to cover.
  • 2 bring to a boil; cook for 15 minutes or until potatoes are tender.
  • 3 add half-and-half and butter to a small saucepan; heat until just warm.
  • 4 drain potatoes and transfer them to a bowl.
  • 5 mash potatoes, slowly adding half-and-half mixture until potatoes are creamy.
  • 6 stir in jalapenos, green onions, salt, pepper, and lime zest.
