Chili With Squash And Beans

Ingredients

  • Servings: 6
  • 1 lb lean ground beef
  • 3 cups tomato juice
  • 1 (15 ounce) can chunky tomato sauce
  • 1 (15 ounce) can red kidney beans
  • 2 cups chopped celery
  • 2 cups sliced onions
  • 2 cups butternut squash, cut in 1-inch pieces
  • 1 cup sliced red bell pepper
  • 1 cup sliced zucchini
  • 1 cup sliced mushrooms
  • 1/2 jalapeno chili, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • salt and pepper
  • 6 lime wedges

Recipe

  • 1 cook ground beef in large skillet over medium heat until browned, about 8 minutes, crumbling with a fork.
  • 2 combine beef and remaining ingredients, except salt, pepper and lime wedges, in a slow cooker.
  • 3 cover and cook 6-8 hours.
  • 4 season to taste with salt and pepper. serve with lime wedges.
