Ellie's Chorizo & Beans

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 8 ounces chorizo sausage
  • 1 cup onion, diced
  • 1 fresh jalapeno, diced
  • 1 clove garlic, minced
  • 1 (20 ounce) can goya pinto beans, undrained

Recipe

  • 1 in a medium skillet, cook chorizo and drain if necessary.
  • 2 add onions, garlic and jalapeño, sautéing until soft.
  • 3 add beans and let simmer for 1 hour over low heat and serve with tortillas, sour cream and salsa.
