Crab Corn And Black Bean Salad

Ingredients

- 2 tablespoons lime juice
- 3 tablespoons canola oil
- 1 tablespoon cider vinegar
- 1/4 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
- salt, if needed, to taste
- 1 1/2 cups frozen corn, thawed
- 1 cup canned black beans, rinsed and drained
- 1 cup lump crabmeat, picked over
- 1/2 cup chopped red bell pepper
- 1 cup chopped tomato
- 1 cup chopped red onion
- 1 jalapeno pepper, seeded and chopped (optional)
- 1/4 cup chopped fresh cilantro
Recipe
- 1 in a large bowl, combine the dressing ingredients and stir well.
- 2 add all the salad ingredients to the bowl and gently toss to mix and coat well.
- 3 serve over greens.
