Crab Corn And Black Bean Salad

Ingredients

  • Servings: 4
  • 2 tablespoons lime juice
  • 3 tablespoons canola oil
  • 1 tablespoon cider vinegar
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • salt, if needed, to taste
  • 1 1/2 cups frozen corn, thawed
  • 1 cup canned black beans, rinsed and drained
  • 1 cup lump crabmeat, picked over
  • 1/2 cup chopped red bell pepper
  • 1 cup chopped tomato
  • 1 cup chopped red onion
  • 1 jalapeno pepper, seeded and chopped (optional)
  • 1/4 cup chopped fresh cilantro

Recipe

  • 1 in a large bowl, combine the dressing ingredients and stir well.
  • 2 add all the salad ingredients to the bowl and gently toss to mix and coat well.
  • 3 serve over greens.
