Blum's Spicy Chicken Quesadillas

Total Time: 33 mins Preparation Time: 30 mins Cook Time: 3 mins

Ingredients

  • Servings: 12
  • 2 large chicken breast halves
  • 1 ounce olive oil
  • 4 ounces diced jalapenos
  • 1 (14 1/2 ounce) can stewed tomatoes
  • 1 (16 ounce) can refried beans
  • 12 -16 flour tortillas (i use homemade tortillas)
  • 2 cups shredded cheddar cheese or 2 cups shredded nacho cheese

Recipe

  • 1 make up flour tortillas according to the recipe. except i don't brown them right away.
  • 2 i place them on a plate until ready to cook the quesadillas.
  • 3 cut up chicken into small diced pieces and then cook chicken in oil till all of chicken piece are .
  • 4 take stewed tomatoes and chop them up so its finer. heat this in a small pot along with the jalapenos and refried beans. mix until smooth.
  • 5 add chicken and mix altogether.
  • 6 heat up a griddle or large skillet then place flour tortilla onto skillet, on one half of tortilla place your chicken mixture and then top with cheese. fold over other half of tortilla on top of mixture. brown both sides, but don't burn it.
  • 7 cut and serve.
