Low Fat Guacamole With Cottage Cheese

Ingredients

  • 1 ripe avocado
  • 2/3 cup low fat cottage cheese
  • 2 tablespoons fresh lime juice
  • 1 tablespoon green onion
  • 3/4 teaspoon minced jalapeno
  • 2 garlic cloves, minced
  • salt and pepper

Recipe

  • 1 slice the avocado in half and scoop out the flesh.
  • 2 in a food processor, combine the avocado, cottage cheese, lime juice, green onions, jalapeño and garlic.
  • 3 purée until smooth.
  • 4 add salt and pepper to taste.
  • 5 serve immediately or chill.
  • 6 serve with raw veggies or tortilla chips.
