Light Guacamole

Ingredients

  • 1 medium tomato (cored, seeded, and chopped)
  • 1 cup frozen lima beans
  • 1 hass avocado (pitted)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons reduced-fat mayonnaise
  • 1/2 teaspoon salt
  • 1/4 cup cilantro (minced)
  • 1 medium jalapeno (stemmed, seeded, and minced)
  • 1 tablespoon shallot (minced)
  • 1 garlic clove (minced)
  • 1/2 teaspoon cumin
  • 1 pinch black pepper

Recipe

  • 1 cook frozen lima beans, then rinse under cool water and dry (remove skins unless baby lima beans and you'd like to be creamier).
  • 2 process 1/4 an avocado, lima beans, lime juice, mayo, and 1/2 tsp salt in food processor.
  • 3 cube the rest of the avocado and stir together with the rest of the ingredients. add salt and pepper to taste.
  • 4 let sit, tightly wrapped, in fridge for flavors to combine.
