Jalapeno En Escabeche (pickled Jalapeno)

Ingredients

  • Servings: 12
  • 12 jalapenos
  • 1 onion (sliced thin)
  • 5 large garlic cloves (pressed)
  • 1/2 cup olive oil
  • 1 cup vinegar
  • 1/2 cup water
  • 2 teaspoons salt
  • 1 teaspoon oregano
  • 4 bay leaves

Recipe

  • 1 roast, peel and seed jalapenos. (might want to use gloves to prevent burning.).
  • 2 saute onion and garlic in olive oil until clear.
  • 3 add vinegar, water, salt, oregano and bay leaves.
  • 4 bring to a boil.
  • 5 add peppers and simmer 10 minutes.
  • 6 store in covered jars in refrigerator.
