Mango Shrimp Salsa

Ingredients

  • Servings: 10
  • 2 large tomatoes, seeded
  • 2 ripe avocados
  • 1 ripe mango
  • 1 red bell pepper
  • 1/2 jalapeno, seeded
  • 1/2 cup cilantro, chopped
  • 1 cup cooked fresh baby shrimp
  • 1 lime, juice of
  • 1 teaspoon lime zest, grated
  • 1 garlic clove, pressed
  • salt & pepper

Recipe

  • 1 dice the first 3 ingredients into small pieces.
  • 2 finely dice the jalapeño. you can add more to taste.
  • 3 stir in remaining ingredients.
  • 4 refrigerate for an hour before serving.
  • 5 serve with tortilla chips, "scoops" or on a bed of lettuce.
