Gracie's Raspberry Chicken Spaghetti

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 2 cups cooked chicken breasts, diced
  • 1/2 cup sweet yellow onion, diced
  • 1 cup celery, sliced
  • 1 tablespoon butter or 1 tablespoon olive oil
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 dash pepper
  • 1/2 cup raspberry vinegar
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 2 tablespoons jalapeno jelly
  • 2 cups thin spaghetti, cooked

Recipe

  • 1 in a non-stick skillet, saute chicken, onion and celery in butter for about 3 minutes over medium heat.
  • 2 add garlic powder, salt and pepper while cooking.
  • 3 add vinegar, sugars and jelly.
  • 4 continue to cook and stir over medium heat until sauce cooks down and begins to turn to syrup.
  • 5 remove from heat.
  • 6 stir in cooked spaghetti.
  • 7 serve warm as an entree, or chill and serve over a bed of crisp lettuce and sliced green and/or red bell peppers.
