Chicken Surprise

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 lbs chicken, cubed
  • 1 onion, chopped
  • 2 tomatoes, roughly diced
  • 4 garlic cloves, finely diced
  • 2 -4 jalapeno chilies, sliced
  • 1 cup fresh spinach, chopped
  • 1 cup bean sprouts
  • 2 -6 dried hot peppers (de-stemmed, left whole)
  • 1 (8 ounce) can pineapple chunks
  • 1 (8 ounce) can water chestnuts, roughly chopped
  • 1 (8 ounce) can bamboo shoots
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon chili oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Recipe

  • 1 1. in a pan over medium heat, cook the chicken. drain of excess fat and water.
  • 2 2. add soy sauce, sesame oil, oyster sauce, worcestershire sauce, chili oil, basil, and oregano. stir to coat chicken with mixture.
  • 3 3. add onions and garlic. cook until onions are slightly soft.
  • 4 4. stir in spinach. cook until wilted.
  • 5 5. stir in chilies, pineapples, bamboo shoots, and water chestnuts. let simmer for a few minutes.
  • 6 6. stir in bean sprouts, and tomatoes. let simmer for a few minutes.
  • 7 7. serve over rice.
