Halo Hash

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 cups brown rice
  • 2 cups pinto beans, cooked (or any bean)
  • 1 cup salsa
  • 2 ounces low-fat cheese
  • 1 tablespoon olive oil

Recipe

  • 1 saute and partly mash beans in hot oil. add rice, cook until desired doneness, adding salsa and seasonings such as cumin, jalapenos, hot sauce, etc, to taste. a dollop of sour cream improves this tremendously, but be warned, it will cause your halo to tilt precariously! ;-).
