Fajita Bean Nacho Pie

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 3
  • 1 (14 ounce) can mexican style beans, drained (in water)
  • low-fat cooking spray (sunflower)
  • 1 (14 ounce) can chopped tomatoes
  • 1 large green capsicum, cubed
  • old el paso or discovery fajita seasoning mix
  • 1 small red onion, finely chopped
  • 3 medium garlic cloves, crushed
  • red jalapeno (to taste, i use old el paso)
  • 1 dash tabasco sauce (optional)
  • 1 dash barbecue sauce
  • 1 pinch sea salt
  • 1 teaspoon fresh basil, chopped
  • 75 g nacho cheese flavored tortilla chips
  • 100 g reduced-fat cheddar cheese (grated)
  • mild salsa (to serve)

Recipe

  • 1 preheat an oven to 200 degrees centigrade (gas mark 6).
  • 2 spray a frying pan with the cooking spray and heat slightly before adding onions, fry till soft.
  • 3 add peppers, garlic and jalapeno's, fry till starting to brown.
  • 4 add beans, tomatoes, tabasco, bbq sauce and salt. simmer for 3 minutes.
  • 5 place the mix in a casserole dish and cover with tortilla chips and cheese.
  • 6 bake for 12-15 minutes, serve with salsa and remaining tortillas.
