Fajita Bean Nacho Pie

Ingredients

- 1 (14 ounce) can mexican style beans, drained (in water)
- low-fat cooking spray (sunflower)
- 1 (14 ounce) can chopped tomatoes
- 1 large green capsicum, cubed
- old el paso or discovery fajita seasoning mix
- 1 small red onion, finely chopped
- 3 medium garlic cloves, crushed
- red jalapeno (to taste, i use old el paso)
- 1 dash tabasco sauce (optional)
- 1 dash barbecue sauce
- 1 pinch sea salt
- 1 teaspoon fresh basil, chopped
- 75 g nacho cheese flavored tortilla chips
- 100 g reduced-fat cheddar cheese (grated)
- mild salsa (to serve)
Recipe
- 1 preheat an oven to 200 degrees centigrade (gas mark 6).
- 2 spray a frying pan with the cooking spray and heat slightly before adding onions, fry till soft.
- 3 add peppers, garlic and jalapeno's, fry till starting to brown.
- 4 add beans, tomatoes, tabasco, bbq sauce and salt. simmer for 3 minutes.
- 5 place the mix in a casserole dish and cover with tortilla chips and cheese.
- 6 bake for 12-15 minutes, serve with salsa and remaining tortillas.
