Cranberry Salsa

Ingredients
- 12 ounces cranberries (fresh or frozen)
- 3/4 cup sugar
- 1/4 cup red onion, finely diced
- 2 tablespoons finely chopped cilantro
- 1 tablespoon jalapeno pepper, seeded and minced
Recipe
- 1 in a saucepan, combine cranberries, sugar and ¾ cup water.
- 2 bring to a boiling, stirring occasionally until cranberries pop and mixture thickens slightly, 5-7 minutes.
- 3 remove from heat and let stand 30 minutes, until cool.
- 4 stir in red onion, cilantro and jalapeno pepper. cover and refrigerate for at least 2 hours before serving.
