Cranberry Salsa

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 12 ounces cranberries (fresh or frozen)
  • 3/4 cup sugar
  • 1/4 cup red onion, finely diced
  • 2 tablespoons finely chopped cilantro
  • 1 tablespoon jalapeno pepper, seeded and minced

Recipe

  • 1 in a saucepan, combine cranberries, sugar and ¾ cup water.
  • 2 bring to a boiling, stirring occasionally until cranberries pop and mixture thickens slightly, 5-7 minutes.
  • 3 remove from heat and let stand 30 minutes, until cool.
  • 4 stir in red onion, cilantro and jalapeno pepper. cover and refrigerate for at least 2 hours before serving.
