Danish Crunch

Total Time: 9 mins Preparation Time: 5 mins Cook Time: 4 mins

Ingredients

  • Servings: 2
  • 1/3 cup nonfat cottage cheese
  • 1/2 teaspoon cumin
  • 2 tablespoons chopped green onions, including tops
  • 4 1/2 teaspoons chopped parsley
  • 2 tablespoons finely chopped jarred mild jalapeno peppers, rings
  • 4 slices rye crisps or 2 slices rye bread
  • 2 ounces jarlsberg cheese, thinly sliced
  • 2 ounces reduced-sodium ham, sliced
  • pepper

Recipe

  • 1 combine first 5 ingredients.
  • 2 spread 3 rounded tbsp.
  • 3 vegetable mixture on each slice of rye crisp bread.
  • 4 top with cheese and meat.
  • 5 sprinkle with pepper to taste.
  • 6 if desired, broil 6" from heat source 3-4 minutes.
