Cilantro Rice With All Raw Veggies

Total Time: 23 mins Preparation Time: 5 mins Cook Time: 18 mins

Ingredients

  • 1 cup uncooked rice
  • 2/3 cup cilantro, loosely packed
  • 1/3 cup chopped onion
  • 1/4 cup green onion, chopped
  • 1 jalapeno (or to taste)
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil

Recipe

  • 1 cook rice as usual, with 1 teaspoons salt per cup of rice. i always use long grain rice. however, you could use minute rice too.
  • 2 puree everything except the rice in a blender, add to the cooked rice, stir well.
