Gazpacho Salad

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • Servings: 4
  • 1/4 cup v8 vegetable juice
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon tabasco jalapeno sauce (jalapeno pepper sauce)
  • 1 english seedless cucumber, quartered lengthwise and sliced 1/4 inch thick
  • 2 tomatoes, cut in chunks
  • 1 yellow bell pepper, cut into chunks
  • 1/4 cup red onion, chopped
  • 1/4 cup parsley, finely chopped

Recipe

  • 1 in a large bowl mix together juice, oil, vinegar, salt and tabasco.
  • 2 stir in cucumber,tomatoes,pepper and onion.
  • 3 place in the fridge for 1 hour,stirring often until cold.
  • 4 stir in parsley.
