Gazpacho Salad

Ingredients
- Servings: 4
- 1/4 cup v8 vegetable juice
- 1 1/2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon tabasco jalapeno sauce (jalapeno pepper sauce)
- 1 english seedless cucumber, quartered lengthwise and sliced 1/4 inch thick
- 2 tomatoes, cut in chunks
- 1 yellow bell pepper, cut into chunks
- 1/4 cup red onion, chopped
- 1/4 cup parsley, finely chopped
Recipe
- 1 in a large bowl mix together juice, oil, vinegar, salt and tabasco.
- 2 stir in cucumber,tomatoes,pepper and onion.
- 3 place in the fridge for 1 hour,stirring often until cold.
- 4 stir in parsley.
