Easy Jalapeño Cilantro Chicken Salad

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb boneless skinless chicken breast
  • 4 tablespoons light mayonnaise
  • 1/2 cup vidalia onion, chopped
  • 1/2 cup pickled jalapeno pepper, chopped
  • 4 tablespoons fresh cilantro, chopped
  • 1 tablespoon seasoning salt

Recipe

  • 1 heat chicken broth to boil on stovetop.
  • 2 cook chicken in chicken broth until cooked through (about 8-10 minutes) shred or chop chicken.
  • 3 mix together with jalapeño, onion, mayo, seasoning salt and cilantro.
  • 4 chill for at least 30 minutes.
  • 5 enjoy! (stuff in a pepper for a low carb, protein packed lunch!).
