Easy Jalapeño Cilantro Chicken Salad

Ingredients

- 1 lb boneless skinless chicken breast
- 4 tablespoons light mayonnaise
- 1/2 cup vidalia onion, chopped
- 1/2 cup pickled jalapeno pepper, chopped
- 4 tablespoons fresh cilantro, chopped
- 1 tablespoon seasoning salt
Recipe
- 1 heat chicken broth to boil on stovetop.
- 2 cook chicken in chicken broth until cooked through (about 8-10 minutes) shred or chop chicken.
- 3 mix together with jalapeño, onion, mayo, seasoning salt and cilantro.
- 4 chill for at least 30 minutes.
- 5 enjoy! (stuff in a pepper for a low carb, protein packed lunch!).
