Ingredients
- 2 cups fresh pineapple, diced
- 1 large red onion, diced
- 1 jalapeno pepper, seeded and chopped
- 2 tablespoons red wine vinegar
- 3 tablespoons vegetable oil
- 1/2 cup chopped fresh coriander (cilantro)
Recipe
- 1 combine all the ingredients in a large mixing bowl.
- 2 stir well.
- 3 cover and refrigerate 1 hour before serving, to allow the flavors to develop.
- 4 return to room temperature before serving.
