Cajun Corn Casserole

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 cup uncooked rice
  • 1/2 cup butter
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 stalks celery, chopped
  • 2 jalapeno peppers, chopped
  • 2 (14 ounce) cans creamed corn
  • 1/2 cup grated velveeta cheese
  • 1/2 cup grated sharp cheddar cheese

Recipe

  • 1 cook rice with a little butter and salt added.
  • 2 saute onion, bell pepper, and celery in one stick of butter.
  • 3 combine rice, 2 cans corn, sauted vegetables, and jalapeno peppers.
  • 4 place in buttered casserole dish.
  • 5 mix in velveeta and 1/4 cup of cheddar.
  • 6 sprinkle remaining 1/4 cup of cheddar on top.
  • 7 bake at 350 degrees.
