Cajun Corn Casserole

Ingredients
- Servings: 4
- 1 cup uncooked rice
- 1/2 cup butter
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 stalks celery, chopped
- 2 jalapeno peppers, chopped
- 2 (14 ounce) cans creamed corn
- 1/2 cup grated velveeta cheese
- 1/2 cup grated sharp cheddar cheese
Recipe
- 1 cook rice with a little butter and salt added.
- 2 saute onion, bell pepper, and celery in one stick of butter.
- 3 combine rice, 2 cans corn, sauted vegetables, and jalapeno peppers.
- 4 place in buttered casserole dish.
- 5 mix in velveeta and 1/4 cup of cheddar.
- 6 sprinkle remaining 1/4 cup of cheddar on top.
- 7 bake at 350 degrees.
