Junior League - Grilled Chicken And Mango Salsa

Ingredients

- 6 cups chopped ripe mangoes
- 1 cup finely chopped red onion
- 1/2 cup chopped cilantro
- 6 tablespoons lime juice
- 2 large cloves garlic, minced
- 4 jalapeno chiles, seeded and minced
- 1/2 teaspoon red pepper flakes
- salt
- 24 small boneless chicken breasts
- 3/4 cup olive oil
- 1/2 cup wine vinegar
- 3 tablespoons ground ginger, root
- 3 tablespoons coriander
- 1 tablespoon cumin
- pepper
- cilantro
Recipe
- 1 salsa: mix all ingredients and chill.
- 2 chicken: mix all ingredients and pour over chicken. reserve 1/4 cup of marinade. marinade for up to 2 days. drain and grill chicken over medium heat. pour salsa over chicken on serving plate. garnish with cilantro.
