Feta Stuffed Jalapenos

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 12 red jalapeno chiles, seeds, veins & tops removed
  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 7 tablespoons feta cheese
  • 1 tablespoon cream cheese

Recipe

  • 1 place the cleaned peppers in a jar or a bowl and cover them with the olive oil & vinegar.
  • 2 cover and place in the fridge for at least 4 hours or overnight.
  • 3 preheat oven to 350.
  • 4 drain the peppers and place them on a baking sheet single layer.
  • 5 bake for 10 minutes or only long enough to soften them-do not let them brown.
  • 6 cool and set aside.
  • 7 mix together the feta & cream cheese.
  • 8 fill each pepper with the cheese mixture.
  • 9 serve as an appetizer or as a side dish with
  • 10 any meal.
