Feta Stuffed Jalapenos

Ingredients
- 12 red jalapeno chiles, seeds, veins & tops removed
- 1/2 cup olive oil
- 1/4 cup vinegar
- 7 tablespoons feta cheese
- 1 tablespoon cream cheese
Recipe
- 1 place the cleaned peppers in a jar or a bowl and cover them with the olive oil & vinegar.
- 2 cover and place in the fridge for at least 4 hours or overnight.
- 3 preheat oven to 350.
- 4 drain the peppers and place them on a baking sheet single layer.
- 5 bake for 10 minutes or only long enough to soften them-do not let them brown.
- 6 cool and set aside.
- 7 mix together the feta & cream cheese.
- 8 fill each pepper with the cheese mixture.
- 9 serve as an appetizer or as a side dish with
- 10 any meal.
