Easy Fajitas

Ingredients

- 1 lb skirt steak
- 1 ounce tequila
- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon horseradish
- 2 garlic cloves
- 1 tablespoon oregano
- 1/8 cup brown sugar
- 2 tablespoons liquid smoke
- 1 jalapeno, chopped
- 1 lemon, juice of
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 garlic clove
- 12 mini flour tortillas
- 1 cup sour cream
- 2/3 cup picante sauce
- 1 garlic clove, chopped
- chopped tomato
- shredded lettuce
- diced avocado
- 2 cups colby-monterey jack cheese, shredded
Recipe
- 1 in a large resealable bag, place meat, tequila, ¼ c olive oil, horseradish, liquid smoke, basalmic vinegar, 2 cloves garlic, adobo, oregano, brown sugar, liquid smoke, chopped jalapeno, and lemon juice.
- 2 marinate meat overnight, turning once.
- 3 reserve marinade.
- 4 grill meat over medium hot coals about 4 minutes per side. take meat off grill and let rest 10 minutes before slicing into strips about 1 inch wide.
- 5 pour marinade into a skillet on the stovetop and add veggies and 1 t olive oil. saute until crisp tender, about 6-8 minutes.
- 6 for sauce:.
- 7 mix sour cream, 1 clove garlic, cumin, and 2/3 c picate sauce in a small bowl.
- 8 heat 12 flour tortillas in the microwave until just warm.
- 9 serve flour tortillas with veggies, picante/sour cream sauce, avocados, tomatoes, lettuce, and cheese. guests can “build� their own mini-fajita.
