Crock Pot Tamale Casserole

Ingredients
- Servings: 6
- 1 lb ground beef
- 1 cup of chopped onion
- 1 large very diced tomato
- 1 green bell pepper
- 1 red bell pepper
- 8 small tortillas (6-8 inch)
- 2 cups mexican blend cheese ((cheddar, monterrey, pepper-jack)
- salt
- pepper
- garlic salt, to taste
Recipe
- 1 brown ground beef and onion in skillet.
- 2 drain grease.
- 3 mix peppers and tomato together.
- 4 cut 4 tortillas into bite size pieces.
- 5 i used a pizza cutter to slice into eights.
- 6 layer tortilla slices on bottom of crock pot make a layer of ground beef layer peppers and tomatoes repeat layers twice top with cheese cook on low 2-4 hours. i usually leave the cheese off until the last 30-45 minutes of cooking.
- 7 serve with sour cream, hot peppers (jalapeno), salsa and refried beans to garnish.
