Chicken Saute With Mango Sauce

Ingredients

- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 jalapeno pepper, seeded and minced
- 2 garlic cloves, minced
- 2 teaspoons fresh ginger, minced
- 1/2 cup reduced-sodium chicken broth
- 1/2 cup orange juice
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 1 cup diced mango
- 2 tablespoons lime juice
- 2 tablespoons cilantro, chopped
Recipe
- 1 heat olive oil in a large skillet over medium heat.
- 2 trim visible fat from chicken breasts.
- 3 combine flour, salt and pepper in a bowl, dredge each chicken breast in the flour mixture and place into skillet.
- 4 cook until no longer pink in center, 4 to 5 minutes on each side. transfer to a plate and cover to keep warm.
- 5 add jalapeno, garlic and ginger to the pan, stirring until softened (1 to 2 minutes).
- 6 add broth and stir for an additional minute.
- 7 mix orange juice, brown sugar and cornstarch in a small bowl; add to the pan and stir until thickened (about 4 minutes).
- 8 stir in mango and cook until heated through (about 1 minute).
- 9 remove from heat and stir in lime juice. spoon sauce over chicken and season with cilantro.
