Garrison Potatoes (papas Cuarteleras)

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 -3 tablespoons vegetable oil (or lard, if you prefer)
  • 1 lb potato, cut into 3/4-inch cubes (peeling optional)
  • salt
  • 1/2 medium onion, thinly sliced
  • 6 ounces tomatoes, finely chopped (about 1 cup)
  • pickled jalapeno pepper, quartered, to taste
  • 1/2 cup water (approximate)

Recipe

  • 1 heat oil in a skillet over medium-high heat.
  • 2 add potatoes and salt, and cook until just beginning to turn brown.
  • 3 add onion.
  • 4 cook until onion begins to turn translucent.
  • 5 add tomatoes and cook for a few minutes.
  • 6 add jalapenos and water.
  • 7 reduce heat to medium.
  • 8 cover and cook until potatoes are tender and moist, about 15 minutes.
  • 9 if there is too much liquid, uncover and cook for a few minutes more.
  • 10 cover and set aside for 30 minutes before serving.
