Mango And Banana Chutney

Total Time: 21 mins Preparation Time: 1 min Cook Time: 20 mins

Ingredients

  • 1 cup onion, dices small
  • 2 tablespoons peanut oil (canola ok)
  • 1 mango, green, diced
  • 1 cup vinegar
  • 1 cup orange juice
  • 1 lb banana, very ripe sliced 1/4 inch thick
  • 1 tablespoon ginger, fresh grated
  • 1/2 cup raisins
  • 1/2 cup brown sugar
  • 1 tablespoon serrano chili, finely chopped (jalapeno ok or 3/4 tbs red pepper flakes)

Recipe

  • 1 saute onion in oil until clear, 4-5 minutes.
  • 2 add mango and cook 2 minutes over medium heat.
  • 3 add vinegar and oj and bring to simmer and simmer 10 minutes.
  • 4 add everything else and bring back to a simmer.
  • 5 remove from heat and cool if storing in fridge up to 2 weeks.
  • 6 otherwise process safely for canning.
