Green Chile Stew

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • Servings: 12
  • 4 lbs lamb, cubed
  • 28 ounces green chilies, chopped
  • 28 ounces green enchilada sauce
  • 1 onion, chopped
  • 1 tablespoon ground cumin

Recipe

  • 1 cube the lamb and brown with the onion.
  • 2 add the remaining ingredients and simmer for two hours on low or until soft.
  • 3 serve in a bowl with sour cream and or cheese as garnishes or wrapped in a flour tortilla. eggs the next day are dynamite with this as a wrap.
  • 4 hotter palettes can add some chopped jalapenos and green tabasco like i do.
