Green Chile Stew

Ingredients
- Servings: 12
- 4 lbs lamb, cubed
- 28 ounces green chilies, chopped
- 28 ounces green enchilada sauce
- 1 onion, chopped
- 1 tablespoon ground cumin
Recipe
- 1 cube the lamb and brown with the onion.
- 2 add the remaining ingredients and simmer for two hours on low or until soft.
- 3 serve in a bowl with sour cream and or cheese as garnishes or wrapped in a flour tortilla. eggs the next day are dynamite with this as a wrap.
- 4 hotter palettes can add some chopped jalapenos and green tabasco like i do.
