Grilled Chicken With Sesame Ginger Sauce

Total Time: 2 hrs 40 mins Preparation Time: 2 hrs 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon canola oil
  • 1 garlic clove, minced
  • 1 jalapeno pepper, seeded and minced
  • 2 teaspoons fresh ginger, minced
  • 1/2 teaspoon ground cumin
  • 6 boneless skinless chicken breasts
  • 1 teaspoon canola oil
  • 1/2 cup fresh ginger, minced
  • 2 teaspoons sugar
  • 1/3 cup water
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil

Recipe

  • 1 to make marinade: combine soy sauce, lemon juice, oil, garlic, jalapeno, ginger and cumin in a plastic zipper bag.
  • 2 add chicken and seal bag.
  • 3 refrigerate a minimum of 2 hours or overnight.
  • 4 to make sesame ginger sauce: heat oil in a small saucepan over medium heat.
  • 5 add ginger and sugar and a small amount of the water.
  • 6 cook until softened.
  • 7 remove from heat, add remaining ingredients.
  • 8 cover and refrigerate for a minimum of 2 hours or overnight.
  • 9 prior to serving, strain sauce (to remove minced ginger) and reheat.
  • 10 remove chicken from marinade and grill until no longer pink in center, about 5 min per side.
  • 11 thinly slice chicken and top with 1 tablespoon sesame ginger sauce.
