Grilled Chicken With Sesame Ginger Sauce

Ingredients

- 1/4 cup soy sauce
- 2 tablespoons lemon juice
- 1 tablespoon canola oil
- 1 garlic clove, minced
- 1 jalapeno pepper, seeded and minced
- 2 teaspoons fresh ginger, minced
- 1/2 teaspoon ground cumin
- 6 boneless skinless chicken breasts
- 1 teaspoon canola oil
- 1/2 cup fresh ginger, minced
- 2 teaspoons sugar
- 1/3 cup water
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
Recipe
- 1 to make marinade: combine soy sauce, lemon juice, oil, garlic, jalapeno, ginger and cumin in a plastic zipper bag.
- 2 add chicken and seal bag.
- 3 refrigerate a minimum of 2 hours or overnight.
- 4 to make sesame ginger sauce: heat oil in a small saucepan over medium heat.
- 5 add ginger and sugar and a small amount of the water.
- 6 cook until softened.
- 7 remove from heat, add remaining ingredients.
- 8 cover and refrigerate for a minimum of 2 hours or overnight.
- 9 prior to serving, strain sauce (to remove minced ginger) and reheat.
- 10 remove chicken from marinade and grill until no longer pink in center, about 5 min per side.
- 11 thinly slice chicken and top with 1 tablespoon sesame ginger sauce.
