Green Chili

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 1 lb beef stew meat, diced
  • 1 cup water
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • chili pepper (1 or 2 hot such as jalapenos)
  • 2 bell peppers, diced (green)

Recipe

  • 1 in a 2 quart saucepan, combine beef, water, garlic and salt.
  • 2 cover and simmer one hour.
  • 3 place chile peppers on baking sheet, bake in 400 degree oven until peppers are browned and skin splits (about 25 minutes.
  • 4 cool slightly.
  • 5 while still warm, peel skin, halve peppers and remove seeds.
  • 6 finely chop chili peppers and add to meat mixture along with bell peppers.
  • 7 simmer covered 20 minutes.
  • 8 uncover and simmer 20 minutes more.
