Gilroy Garlic Festival Wowchos

Ingredients

  • Servings: 4
  • 2 large heads of garlic, separated into cloves and peeled
  • 2 tablespoons oil
  • tortilla chips, large bag
  • 1/4 cup red onion, chopped
  • 1 (4 ounce) can green chilies
  • 1/3 cup sliced pimento stuffed olive (optional)
  • 1 1/2 cups monterey jack cheese, shredded and jalapeno flavored
  • chopped cilantro (to taste)
  • chopped green onion top (to taste)

Recipe

  • 1 pre-heat oven to 375-degrees f.
  • 2 coat garlic cloves with oil and bake for 30 minutes or until soft and golden.
  • 3 cover a 9"x13" foil covered metal pan with tortilla chips.
  • 4 mash and distribute garlic, onion, chiles and olives evenly over the chips.
  • 5 cover with shredded cheese and bake at 400-degrees f for 5 minutes or until cheese melts.
  • 6 top with cilantro and green onions.
