Chimichurri Sauce

Ingredients

  • Servings: 6
  • 6 garlic cloves, peeled, and chopped coarse
  • 1 -2 red jalapeno chile, stemmed, seeded, chopped coarsely
  • 1 dried chipotle chile, in adobo sauce seeded chopped coarsely
  • 1/4 cup fresh oregano leaves
  • 1/8 cup cilantro leaf
  • 1 cup fresh parsley leaves
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/4 teaspoon salt

Recipe

  • 1 combine garlic, jalapeño and chipotle in food processor and pulse to mince finely.
  • 2 add oregano, cilantro and parsley; pulse to chop finely.
  • 3 add remaining ingredients and process until smooth.
  • 4 use immediately or refrigerate until ready to use.
