Cheesy Enchilada Casserole

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 lb ground beef
  • 1 medium green pepper
  • 1 medium onion
  • 1 clove garlic (or equivalent)
  • 1 (15 ounce) can pinto beans with jalapeno peppers
  • 1 (15 ounce) can tomato sauce
  • 1 cup pace picante sauce
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 12 flour tortillas
  • 2 cups monterey jack cheese (shredded)

Recipe

  • 1 brown meat with pepper, onion, and garlic in a skillet.
  • 2 drain.
  • 3 add beans, tomato sauce, picante sauce, cumin, and salt.
  • 4 simmer 15 minutes.
  • 5 in a 13x9x2 baking dish, layer meat mixture, tortillas, meat mixture, half of cheese, tortillas, meat mixture.
  • 6 cover with aluminum foil and bake for 20 minutes at 350 degrees.
  • 7 remove foil and top with remaining cheese.
  • 8 bake uncovered for 5 minutes.
