Cheesy Enchilada Casserole

Ingredients
- 1 lb ground beef
- 1 medium green pepper
- 1 medium onion
- 1 clove garlic (or equivalent)
- 1 (15 ounce) can pinto beans with jalapeno peppers
- 1 (15 ounce) can tomato sauce
- 1 cup pace picante sauce
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 12 flour tortillas
- 2 cups monterey jack cheese (shredded)
Recipe
- 1 brown meat with pepper, onion, and garlic in a skillet.
- 2 drain.
- 3 add beans, tomato sauce, picante sauce, cumin, and salt.
- 4 simmer 15 minutes.
- 5 in a 13x9x2 baking dish, layer meat mixture, tortillas, meat mixture, half of cheese, tortillas, meat mixture.
- 6 cover with aluminum foil and bake for 20 minutes at 350 degrees.
- 7 remove foil and top with remaining cheese.
- 8 bake uncovered for 5 minutes.
