Kathy Hirdler's Fire Camp Chili Con Carne With Beans

Total Time: 14 hrs Preparation Time: 8 hrs Cook Time: 6 hrs

Ingredients

  • 100 lbs pinto beans
  • 48 large onions, chopped
  • 4 cups jalapeno chiles with juice
  • 40 lbs meat, sausage, lamb
  • bacon
  • 4 cups chili powder
  • salt

Recipe

  • 1 soak beans overnight, then raise to a boil on high heat.
  • 2 add all ingredients and simmer until tender (about 6 hours).
  • 3 add water as necessary.
  • 4 stir occasionally.
