Firecracker Prawns

Ingredients

  • Servings: 4
  • 2 teaspoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons cornstarch
  • 3 tablespoons ketchup
  • 1/4 cup chicken broth
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chili-garlic sauce
  • 1 teaspoon sugar
  • 1 lb medium raw shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 1 fresh jalapeno chile, cut into thin strips
  • 8 small dried red chilies
  • 1 red bell pepper, julienned
  • 1/2 yellow onion, thinly sliced

Recipe

  • 1 in a bowl, combine marinade ingredients and mix well,. add shrimp, and stir to coat evenly. let stand 10 minutes.
  • 2 in a small bowl, combine sauce ingredients and mix well.
  • 3 place a wok over hight heat until hot. add oil, swirling to coat sides of pan, add fresh and dried chiles; cook, stirring, until dried chiles begin to brown, about 15 seconds. add shrimp, bell pepper and onion; stir-fry until shrimp begin to curl and turn pink, 1 1/2 minutes. add sauce and bring to a boil. stir to coat shrimp evenly.
  • 4 transfer to a serving plate and serve.
