Fire Escape Flank Steak

Ingredients

- 1/4 cup vegetable oil
- 3 tablespoons lime juice
- 1 tablespoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 -2 jalapeno pepper, stemmed and minced
- 2 tablespoons minced fresh cilantro leaves
- 1 flank steak, about 2 pounds trimmed of fat
- salt
Recipe
- 1 whisk oil, lime juice, garlic, cumin, chili powder, jalapenos, and cilantro together in a small bowl.
- 2 pace the meat in a zip lock bag pour the marinade over the meat cover and refrigerate for at least one hour but i do it over night.
- 3 light the grill.
- 4 generously sprinkle both sides of the steak with salt to taste.
- 5 scrape the hot grill surface clean.
- 6 grill the steak, turning once, until done the way you like it, 8 to 10 minutes for medium rare.
- 7 transfer steak to platter and carve, cutting meat into thin slices across the grain.
