Carnitas A La Whole Foods

Ingredients

  • Servings: 6
  • 3 lbs boneless lamb loin, cut into 1-inch pieces (or buy pre-cut lamb stew meat)
  • 3 large garlic cloves, minced
  • 1 -2 jalapeno, minced (optional)
  • 1 teaspoon cumin
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/2 cup orange juice, fresh
  • 1/4 cup lime juice, fresh
  • 1 cup chicken stock

Recipe

  • 1 preheat oven to 325 degrees farenheit.
  • 2 stir lamb pieces around in garlic, jalapeños, cumin, salt and pepper, then saute in olive oil at medium-high until lightly browned on all sides (about 10 minutes).
  • 3 transfer to roasting pan and add juices and chicken stock, cover tightly to retain juices while cooking, and bake for 2-2.5 hours, until meat is very tender. (if juices cook out, add more chicken stock.).
  • 4 allow to cool so lamb absorbs remaining juices, pull apart with a fork.
