Caribbean Cowpeas And Rice

Ingredients

  • Servings: 4
  • 1 cup black-eyed peas, rinsed and drained
  • 1 onion, chopped
  • 1 jalapeno, seeded and minced
  • 2 garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 cup long-grain rice
  • 1 cup vegetable broth
  • 1/2 cup tomato, crushed
  • 1/2 cup allspice
  • 1/2 teaspoon salt

Recipe

  • 1 soak peas.
  • 2 combine peas with onion, jalapeno, garlic, cumin, thyme, bay leaf and 2 cups water.
  • 3 boil.
