Farmer's Casserole

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 3 cups frozen hash brown potatoes
  • 3/4 cup shredded monteray jack cheese with jalapeno pepper
  • 1 cup diced ham
  • 1/4 cup sliced green onion
  • 4 beaten eggs
  • 1 (12 ounce) can evaporated milk
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt

Recipe

  • 1 grease a 2-quart baking dish.
  • 2 arrange potatoes evenly in the bottom of the dish.
  • 3 sprinkle with cheese, ham, and green onion.
  • 4 in a medium bowl, combine eggs, milk, pepper, and salt.
  • 5 pour egg mixture over potatoe mixture in dish (this dish may be covered and refrigerated at this point for several hours or overnight).
  • 6 bake, uncovered, in a 350 degree oven for 40 to 45 minutes (or 55-60 if made ahead and chilled) or until center appears set.
  • 7 let stand 5 minutes before serving.
