Farmer's Casserole

Ingredients
- Servings: 6
- 3 cups frozen hash brown potatoes
- 3/4 cup shredded monteray jack cheese with jalapeno pepper
- 1 cup diced ham
- 1/4 cup sliced green onion
- 4 beaten eggs
- 1 (12 ounce) can evaporated milk
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Recipe
- 1 grease a 2-quart baking dish.
- 2 arrange potatoes evenly in the bottom of the dish.
- 3 sprinkle with cheese, ham, and green onion.
- 4 in a medium bowl, combine eggs, milk, pepper, and salt.
- 5 pour egg mixture over potatoe mixture in dish (this dish may be covered and refrigerated at this point for several hours or overnight).
- 6 bake, uncovered, in a 350 degree oven for 40 to 45 minutes (or 55-60 if made ahead and chilled) or until center appears set.
- 7 let stand 5 minutes before serving.
