Firecracker Shrimp

Ingredients

- 1/3 cup almonds
- 2 jalapeno peppers, seeded
- 1 bunch cilantro (without stems)
- 6 scallions
- 3 cloves garlic
- 2 teaspoons cumin
- 1/8 cup olive oil
- 1/4 cup water
- 2 lbs medium shrimp or 2 lbs large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/8 cup lemon juice
- salt
Recipe
- 1 place the ingredients for the mash in a food processor or blender and blend until a smooth paste forms (probably about 1 minute).
- 2 place in a covered dish with the shrimp and marinate at least 1 hour, preferably overnight.
- 3 heat the tablespoon of olive oil and saute the shrimp until pink.
- 4 use the lemon juice to deglaze the pan, and season the shrimp with salt as needed.
- 5 if desired, you can garnish with thinly sliced avocado, sprigs of cilantro, or cherry tomatoes.
