Colby Fiesta Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 6 6-inch flour tortillas
  • 2 tablespoons melted butter or 2 tablespoons margarine
  • 1 lb lean ground beef or 1 lb ground chuck
  • 1 package taco seasoning mix
  • 3/4 cup water
  • 2 cups shredded lettuce
  • 1 (15 1/2 ounce) can garbanzo beans, rinsed and drained
  • 1 large tomato, chopped
  • 1 medium onion, sliced into rings
  • 1/2 cup pitted olive
  • 1 cup evaporated milk
  • 2 cups shredded colby cheese
  • chopped jalapeno pepper

Recipe

  • 1 brush tortillas lightly with butter.
  • 2 place tortillas overlapping slightly in a round pie plate.
  • 3 bake at 350 degrees for 10 minutes.
  • 4 brown meat, drain well.
  • 5 add seasoning and water.
  • 6 simmer uncovered for 10 minutes.
  • 7 meanwhile, sprinkle lettuce over tortillas.
  • 8 combine beef, beans, tomatoes, onions, and olives.
  • 9 spoon over lettuce.
  • 10 heat milk in pan until it bubbles around the edges.
  • 11 reduce heat to low.
  • 12 stir in cheese until melted.
  • 13 add peppers if desired.
  • 14 pour over ground meat.
  • 15 carefully lift out tortillas and toppings.
  • 16 serve immediately.
