Lynn Hyndman's Superb Salsa

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (28 ounce) can italian plum tomatoes
  • 1 -2 jalapeno pepper, chopped
  • 1 -2 garlic clove, chopped
  • 1 medium onion, chopped
  • 1/4 bunch coriander, chopped
  • 1 -2 tablespoon wine vinegar
  • salt
  • pepper
  • 1 pinch sugar

Recipe

  • 1 carefully chop the tomatoes in your food processor but only to the stage where they are chopped and not pureed. add a little oil to a frying pan and cook the tomatoes until most of the water has evaporated.
  • 2 remove from the heat and add the rest of the ingredients, mixing them in well and seasoning the mixture to taste. let the mixture come to room temperature before serving with taco chips.
