Ed’s Caribbean Fish Sauce

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium onion, finely diced
  • 1 garlic clove, finely diced
  • 1 jalapeno, finely diced
  • 1 lime, zest of, finely diced
  • 1 1/2 cups chicken broth
  • 1 -2 lime, juice of
  • salt and pepper
  • 3/4 cup unsweetened coconut milk
  • 1 1/2 tablespoons butter
  • 1/4 bunch cilantro, chopped
  • 2 garlic chives, chopped (optional)

Recipe

  • 1 heat small sauce pan on medium flame and add olive oil.
  • 2 saute onions for 3-4 minutes.
  • 3 add garlic, jalapenos, and lime zest and sauté for 2 minutes.
  • 4 add chicken broth and lime juice and reduce by 1/3.
  • 5 add salt and pepper to taste.
  • 6 add ½ coconut milk and reduce 5 minutes. continue to add coconut milk as needed. (this will depend on your taste, if you like thinner or thicker sauces.).
  • 7 finally, whisk in the butter and remove from the heat, add cilantro and chives.
  • 8 serve over fish or on the side.
