Chicken Fajitas

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 5 onions, sliced
  • 4 jalapeno peppers, diced
  • 4 hot banana peppers, seeded and sliced
  • 1 green pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 6 tomatoes, sliced
  • 3 lbs boneless skinless chicken breasts, sliced lengthwise
  • 8 garlic cloves, pressed
  • 2 tablespoons chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt, divided
  • 3 tablespoons olive oil

Recipe

  • 1 put 1 tablespoon olive oil in large cast iron skillet. put onions, peppers, tomatoes, in skillet and sauté til tender. season with ½ teaspoon salt. remove from skillet.
  • 2 put 2 tablespoons olive oil in skillet and sauté chicken with 1 bulb garlic,1/2 teaspoon salt, chili powder, and cumin until it is tender. add some water if it starts to stick.
  • 3 when done, combine with vegetables and adjust seasonings.
