Grilled Shrimp And Avocado Salad (aka Summer Salad)

Ingredients

- 1 -2 cup shrimp
- 1 avocado, ripe
- 1 cup bean sprouts
- 1/2 tomatoes or 1 cup cherry tomatoes
- 2 -3 tablespoons lemon juice, fresh
- lemon zest
- 1 tablespoon extra virgin olive oil
- 1 pinch salt
- 1 pinch pepper
- 1 pinch sugar
- 1/2 cup pineapple
- diced jalapeno
- 1/2 cup plain fat-free yogurt
Recipe
- 1 grill shrimp on medium heat, season with salt and pepper, you can use raw shrimp if desired.
- 2 cut up avocado, tomatoes and any other fruit or veg and throw into a bowl.
- 3 add in the bean sprouts, oil, lemon juice, sugar and zest.
- 4 then salt and pepper to taste!
- 5 if you want to be even more calorie-wise, substitute the oil for skim milk yogurt, it makes a nice refreshing, creamy dressing.
