Grilled Shrimp And Avocado Salad (aka Summer Salad)

Ingredients

  • Servings: 3
  • 1 -2 cup shrimp
  • 1 avocado, ripe
  • 1 cup bean sprouts
  • 1/2 tomatoes or 1 cup cherry tomatoes
  • 2 -3 tablespoons lemon juice, fresh
  • lemon zest
  • 1 tablespoon extra virgin olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch sugar
  • 1/2 cup pineapple
  • diced jalapeno
  • 1/2 cup plain fat-free yogurt

Recipe

  • 1 grill shrimp on medium heat, season with salt and pepper, you can use raw shrimp if desired.
  • 2 cut up avocado, tomatoes and any other fruit or veg and throw into a bowl.
  • 3 add in the bean sprouts, oil, lemon juice, sugar and zest.
  • 4 then salt and pepper to taste!
  • 5 if you want to be even more calorie-wise, substitute the oil for skim milk yogurt, it makes a nice refreshing, creamy dressing.
