(jamaican Jerk) Ja Makin Jerk Meatloaf!

Ingredients
- Servings: 4
- 2 teaspoons coriander
- 2 teaspoons brown sugar
- 4 garlic cloves
- 1 tablespoon olive oil
- 1 1/2 teaspoons thyme
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1 small jalapeno pepper
- 1/2 tablespoon chili sauce (vietnamese chili sauce or 1/4 teaspoon red pepper flakes and 1/4 teaspoon oil)
- 1/8 cup naranja agria juice (substitute lime, lemon or orange juice)
- 1/8 cup soy sauce
- 1 lb ground beef
- 1 batch jerk sauce (see recipe above)
- 1 egg
- 3 tablespoons progresso panko breadcrumbs (or any unseasoned bread crumbs)
- 1 cup ketchup
- 1 tablespoon brown sugar
- 1 teaspoon soy sauce
- 1 teaspoon worcestershire sauce
- 1 1/2 tablespoons dark corn syrup (substitute light corn syrup or pancake syrup, if necessary)
- 1/2 teaspoon thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4-1/2 teaspoon cayenne pepper (depending on how spicy you want it)
- 1 dash cinnamon
- 1 dash nutmeg
- 1 teaspoon dry sherry
- 1 teaspoon apple cider vinegar
Recipe
- 1 preheat oven to 350 degrees.
- 2 put all jerk sauce ingredients in food processor and pulse until well blended.
- 3 put ground beef in medium mixing bowl, add jerk sauce, egg and breadcrumbs.
- 4 mix ingredients thoroughly (i wash my hands and dig in, but you can use a plastic or wooden spoon).
- 5 form an oblong meatloaf and put in 350 degree oven for 20 minutes.
- 6 remove and add meatloaf topping using spatula to spread on top and on sides of meatloaf.
- 7 continue cooking for 25 to 35 more minutes.
