(jamaican Jerk) Ja Makin Jerk Meatloaf!

Ingredients

  • Servings: 4
  • 2 teaspoons coriander
  • 2 teaspoons brown sugar
  • 4 garlic cloves
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons thyme
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1 small jalapeno pepper
  • 1/2 tablespoon chili sauce (vietnamese chili sauce or 1/4 teaspoon red pepper flakes and 1/4 teaspoon oil)
  • 1/8 cup naranja agria juice (substitute lime, lemon or orange juice)
  • 1/8 cup soy sauce
  • 1 lb ground beef
  • 1 batch jerk sauce (see recipe above)
  • 1 egg
  • 3 tablespoons progresso panko breadcrumbs (or any unseasoned bread crumbs)
  • 1 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon worcestershire sauce
  • 1 1/2 tablespoons dark corn syrup (substitute light corn syrup or pancake syrup, if necessary)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4-1/2 teaspoon cayenne pepper (depending on how spicy you want it)
  • 1 dash cinnamon
  • 1 dash nutmeg
  • 1 teaspoon dry sherry
  • 1 teaspoon apple cider vinegar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 put all jerk sauce ingredients in food processor and pulse until well blended.
  • 3 put ground beef in medium mixing bowl, add jerk sauce, egg and breadcrumbs.
  • 4 mix ingredients thoroughly (i wash my hands and dig in, but you can use a plastic or wooden spoon).
  • 5 form an oblong meatloaf and put in 350 degree oven for 20 minutes.
  • 6 remove and add meatloaf topping using spatula to spread on top and on sides of meatloaf.
  • 7 continue cooking for 25 to 35 more minutes.
