Homemade Canning Salsa

Ingredients
- 7 cups tomatoes, diced, seeded, peeled, cored (about 5 pounds)
- 6 green onions, sliced
- 2 jalapeno peppers, diced
- 4 garlic cloves, minced
- 2 tablespoons cilantro, minced
- 2 teaspoons salt
- 1/2 cup vinegar, 5% acidity
- 2 tablespoons lime juice
- 4 drops hot pepper sauce
Recipe
- 1 prepare the jars, lids, and rings in hot water bath.
- 2 combine all ingredients in a large saucepot.
- 3 bring mixture to a boil.
- 4 reduce heat and simmer 15 minutes.
- 5 carefully ladle hot salsa into hot jars, leaving 1/4-inch headspace.
- 6 wipe rim of jar clean.
- 7 place lid on jar and tighten with ring.
- 8 process in warm water bath for 15 minutes.
