Fiesta Bean Dip

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 (15 ounce) cans drained black beans or 4 (15 ounce) cans red beans or 4 (15 ounce) cans pinto beans or 4 (15 ounce) cans black-eyed peas
  • 1 large chopped sweet pepper (green, yellow, orange)
  • 1 large chopped red onion
  • 1 (16 ounce) package frozen corn kernels (broiled or 1 stir-fried to remove juice)
  • 1 chopped jalapeno pepper, no seeds
  • 4 chopped roma tomatoes
  • 1/4 cup chopped parsley or 1/4 cup cilantro
  • 3 limes, juice of
  • 10 -20 drops tabasco sauce
  • salt

Recipe

  • 1 chop veggies and mix together.
  • 2 chill before serving with tortilla chips.
