Cuban Black Beans

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 1/2 teaspoons chopped garlic
  • 2 teaspoons olive oil
  • 1/4 cup chopped red onion
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped carrot
  • 2 jalapenos, seeded and chopped
  • 2 cups cooked black beans (drained and rinsed if canned)
  • 1 1/2 teaspoons chopped fresh coriander
  • 2 tablespoons fresh lime juice

Recipe

  • 1 in a skillet, heat garlic and oil over moderate heat until garlic is fragrant.
  • 2 stir in onion, bell pepper, carrot and jalapeno.
  • 3 cook mixture, stirring occasionally, until vegetables are softened.
  • 4 stir in beans, coriander, lime juice, and salt and pepper to taste and cook, stirring till heated through.
  • 5 keep warm till serving time.
