Jalapeno Roasted Potatoes With Rotini

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 lbs rotini pasta
  • 3 lbs small potatoes, sliced in half
  • 2 jalapenos, seeded and diced
  • 1 large yellow onion, diced
  • 1 tablespoon cumin
  • 1 tablespoon cayenne pepper
  • 5 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 hot red pepper or 1 red bell pepper, diced

Recipe

  • 1 preheat oven to 450 degrees f.
  • 2 combine all ingredients (except rotini) in large mixing bowl, making sure to coat the potatoes with oil, etc.
  • 3 place in roasting pan and bake for 40 minutes.
  • 4 stir once or twice to make sure the potatoes are not sticking to the bottom of the roasting pan.
  • 5 bring pasta to boil in salted water.
  • 6 when cooked pour into large serving bowl and toss with potato mixture.
  • 7 serve with green salad.
