Jalapeno Roasted Potatoes With Rotini

Ingredients
- Servings: 6
- 2 lbs rotini pasta
- 3 lbs small potatoes, sliced in half
- 2 jalapenos, seeded and diced
- 1 large yellow onion, diced
- 1 tablespoon cumin
- 1 tablespoon cayenne pepper
- 5 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 hot red pepper or 1 red bell pepper, diced
Recipe
- 1 preheat oven to 450 degrees f.
- 2 combine all ingredients (except rotini) in large mixing bowl, making sure to coat the potatoes with oil, etc.
- 3 place in roasting pan and bake for 40 minutes.
- 4 stir once or twice to make sure the potatoes are not sticking to the bottom of the roasting pan.
- 5 bring pasta to boil in salted water.
- 6 when cooked pour into large serving bowl and toss with potato mixture.
- 7 serve with green salad.
